Chulalongkorn University's Department of Nutrition and Dietetics, under the guidance of Asst. Prof. Dr. Varanya Techasukthavorn, has been working on a groundbreaking product: the High-Protein Jelly Pudding with Modified Texture for the Elderly with Swallowing Difficulties. After more than a year of rigorous research and development, the product is now set to hit the market around October.

The jelly pudding, marketed under the name "Elderine," was developed in collaboration with Banpong Novitat Co., Ltd. It offers a unique 2-in-1 texture: ready-to-eat jelly that maintains its stability on a spoon and transforms into a soft pudding texture when lightly mashed with a spoon. This innovative texture aims to help elderly people with chewing and swallowing difficulties.

The high-protein content of the jelly pudding, up to 7 grams per cup, is achieved without hardening the texture or making it bitter, thanks to the use of a special whey protein isolate. Each cup also provides 70-80 calories of energy and 7-8 grams of easily digestible protein.

To achieve a low glycemic index, the jelly pudding incorporates modified cassava starch with glucose polymer molecules. This ensures that the product is suitable for those with diabetes or other conditions requiring careful management of blood sugar levels.

Two flavors have been developed to cater to the Thai palate: banana and strawberry. Asst. Prof. Dr. Varanya is not content to stop here, however. She plans to develop more products, including Thai desserts for the elderly, and functional food products with added nutrients essential for the elderly, such as fiber to aid digestion.

In addition to the jelly pudding, Asst. Prof. Dr. Varanya is committed to studying food products for those with swallowing difficulties. She is currently working on a human research study in collaboration with a research team from Khon Kaen University to test the effectiveness of the high-protein jelly pudding product on increasing muscle mass in elderly people.

The High-Protein Jelly Pudding with Modified Texture for the Elderly with Swallowing Difficulties has already made waves on an international stage. Asst. Prof. Dr. Varanya won a Bronze Medal at "The 50th International Exhibition of Inventions Geneva" for the product.

Chulalongkorn University, where this innovative research took place, is ranked in the world's top 50 university list for employment outcomes. The university has also been listed as the best in Thailand for the 15th Consecutive Year, according to the QS World University Rankings 2024.
